Classic Salad Nicoise


Yields

Serves 4

Ingredients

2 hard-boiled eggs, peeled and sliced

12 green beans, blanched and shocked

4 cherry tomatoes cut in quarters

1 can tuna in oil

½ cup black olives of choice cut in half

8 anchovy filets

1 bag mesclun mixed greens

Directions

Dress greens with vinaigrette. Dress beans and tomatoes with vinaigrette.  Arrange everything on plates and sprinkle with salt and fresh ground black pepper.
