Lemon Chia Seed Dressing


Ingredients

Juice of 1 lemon

1 tsp honey

1 T apple cider vinegar

1/4 c olive oil

1 T chia seeds

salt and pepper to taste

Directions

Blend ingredients.

Notes

I love this dressing on a grain bowl.   My favorite is a good whole grain with a nutty flavor, like quinoa or farro.  I add roasted or grilled cauliflower, blistered tomatoes, and broccolini.  It's delicious, and can be really done with any combination of grains and vegetables you enjoy.
