12 ounces fingerling or new potatoes, quartered
1 Tbsp olive oil
1/3 c low sugar bbq sauce
1/4 cup bread crumbs, fine
1/4 cup onion, finely chopped
1 tsp garlic powder
1 pound lean, grass-fed ground beef
8 ounces green beans, topped and tailed
1 tsp olive oil
Preheat oven to 400 degrees F. Line a 15x10 inch baking pan with foil; coat foil with cooking spray. Place potatoes in one half of prepared pan. Drizzle with 1 Tbsp olive oil and sprinkle with salt and pepper.
Bake for 20 minutes, stirring once.
In a large bowl, combine 1/3 cup bbq sauce, bread crumbs, onion, and garlic powder. Add ground beef and mix well.
Shape into 3 1/2 x 2 inch loaves. Place green beans in a bowl and drizzle with 1 tsp of oil and sprinkle with salt and pepper to coat.
Place the loaves and the green beans in the pan with the potatoes and back for 20 to 23 minutes more until the loaves reach a temperature of 160 degrees and the potatoes and beans are tender.
