What I love about this recipe is that I can taste it as I go and adjust as needed until I have the right flavor and texture. Once the dough is all rolled into yummy little chocolate bites, I keep them stored in a sealed container in the refrigerator for up to a week.
To reduce the sugar content and up the nutritional value, I reduce the honey to under 1/8 of a cup and instead of the dark chocolate, I simply use additional cacao powder. You could also use finely chopped nuts in place of the chocolate. They are still delicious and very chocolaty with the raw cacao, but with less sugar!
